Preparation

  • Place peeled and cubed sweet potatoes in a large pot filled with salted water.
  • Bring the water to a rolling boil and cook the potatoes for about 15 minutes, or until tender.
  • Once tender, drain the potatoes in a colander and return them to the hot pot to evaporate moisture for 2-3 minutes.

Mashing and Finishing

  • Add butter to the hot, dry potatoes. Mash them until nearly smooth, avoiding over-mashing.
  • Gradually stir in warmed half-and-half or milk until you reach a creamy consistency.
  • Season with salt and black pepper, and sprinkle cinnamon on top before serving.
