Ingredients
  

For the Chicken

  • 2 pieces boneless, skinless chicken breasts Seasoned with spices
  • 1 teaspoon dried oregano For seasoning
  • 1 teaspoon paprika For seasoning
  • 1 tablespoon olive oil For cooking the chicken
  • to taste Salt and pepper For seasoning

For the Rice

  • 1 cup long-grain white rice Base of the bowl
  • 2 cups chicken broth For cooking the rice
  • 1 tablespoon olive oil For sautéing the rice
  • 1 clove garlic, minced For flavoring the rice
  • 1/4 cup fresh parsley, chopped For garnish and flavor

For the Salad

  • 1 cup cherry tomatoes, halved Fresh vegetable component
  • 1 cup cucumber, diced Fresh vegetable component
  • 1 medium red onion, thinly sliced Fresh vegetable component
  • 1/2 cup kalamata olives, pitted and sliced Adds briny flavor
  • 1/2 cup crumbled feta cheese For topping
  • Juice of 1 lemon For fresh flavor

Instructions
 

Cooking the Chicken

  • Season the chicken breasts with oregano, paprika, salt, and pepper.
  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add chicken breasts and cook for 6-7 minutes on each side until cooked through.
  • Remove chicken from skillet and let rest for a few minutes before slicing.

Cooking the Rice

  • Add another tablespoon of olive oil to the skillet.
  • Sauté minced garlic until fragrant.
  • Stir in the rice and mix to coat.
  • Pour in chicken broth, bring to a boil, then reduce heat and simmer for 15-20 minutes.

Preparing the Salad

  • In a separate bowl, combine cherry tomatoes, cucumber, red onion, olives, and half of the parsley.
  • Drizzle with lemon juice and a touch of olive oil. Toss gently to combine.

Assembling the Bowl

  • Fluff the cooked rice with a fork and stir in the remaining parsley.
  • Divide the rice into serving bowls, top with sliced chicken, Mediterranean salad, and crumbled feta.
