Mediterranean Chicken Wraps

Delicious and healthy wraps filled with grilled chicken, fresh vegetables, and creamy hummus, all wrapped in whole wheat tortillas.

Ingredients
  

For the Chicken

  • 2 pieces boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the Wraps

  • 4 pieces whole wheat tortillas
  • 1/2 cup hummus
  • 1 cup mixed greens
  • 1/2 cup cucumber, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1 tablespoon lemon juice

Instructions
 

Preparation

  • Preheat your grill or grill pan to medium heat.
  • Drizzle olive oil over both sides of the chicken breasts.
  • Sprinkle garlic powder, dried oregano, paprika, salt, and black pepper on both sides of the chicken.

Cooking

  • Place the seasoned chicken breasts on your preheated grill and cook for about 6-7 minutes on each side, until they reach an internal temperature of 165°F (74°C).
  • Let the chicken rest for 5 minutes before slicing into thin strips against the grain.

Assembly

  • Warm the tortillas in a dry skillet or microwave for about 20 seconds.
  • Spread about 2 tablespoons of hummus evenly across the center of each tortilla.
  • Add mixed greens, sliced cucumber, halved cherry tomatoes, and red onion on top of the hummus.
  • Sprinkle feta cheese over the vegetables and top with sliced chicken strips and a drizzle of lemon juice.
  • Fold in the sides of the tortilla and roll it up tightly. Cut in half at a slight angle before serving.

Notes

For meal prep, store ingredients separately and assemble when ready to eat. These wraps can also be served cold or customized with different ingredients.
