Ingredients
  

For the Chicken

  • 2 pieces boneless, skinless chicken breasts Marinate for extra flavor.
  • 2 tablespoons olive oil For marinating the chicken.
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

For the Wraps

  • 4 large whole wheat tortillas or wraps For wrapping the ingredients.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled Can be substituted with goat cheese or mozzarella.
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup hummus Use as a spread in the wraps.
  • 2 cups mixed greens (such as spinach or arugula)
  • 1 juice of lemon For freshness.

Optional

  • to taste tzatziki sauce For serving.

Instructions
 

Preparation

  • Prepare your grill or stovetop grill pan by preheating it to medium-high heat.
  • In a small bowl, combine olive oil, oregano, ground cumin, minced garlic, salt, and pepper to create a marinade.
  • Coat the chicken breasts in the marinade, ensuring they are well-covered. Let the chicken sit for at least 15 minutes.

Cooking

  • Place the marinated chicken breasts on the grill and cook for 6-7 minutes on each side or until golden brown and the internal temperature reaches 165°F.
  • Once cooked, remove the chicken from the grill and let it rest for a few minutes.

Assembling the Wraps

  • Spread a generous layer of hummus in the center of each tortilla.
  • Slice the grilled chicken into thin strips and layer them over the hummus.
  • Add the halved cherry tomatoes, diced cucumber, thinly sliced red onion, crumbled feta cheese, sliced kalamata olives, and mixed greens.
  • Squeeze fresh lemon juice over the top.
  • Fold in the sides of the tortillas and roll them tightly from the bottom to the top.
  • Slice each wrap in half diagonally and serve immediately, optionally with tzatziki sauce.

Notes

Wraps can easily be customized with various vegetables or sauces. For storage, keep wrapped tightly in plastic wrap or an airtight container.
