  • 1 lb ground chicken
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon red pepper flakes

  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 cup chicken broth
  • 1 tablespoon tomato paste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • Juice of 1 whole lemon
  • 4 whole wheat pitas
  • 1 cup crumbled feta cheese
  • 1 cup cucumber, thinly sliced
  • Lettuce leaves For serving
  • Optional: Tzatziki sauce For serving

Instructions
 

Preparation

  • Gather all your ingredients to make the cooking process smoother.
  • In a large skillet, heat olive oil over medium heat.
  • Add finely chopped onion and sauté for 4-5 minutes until translucent.
  • Stir in minced garlic, ground cumin, ground coriander, ground cinnamon, and red pepper flakes. Toast for about a minute.
  • Add ground chicken to the skillet, breaking it apart with a wooden spoon. Cook until browned, 6-8 minutes. Season with salt and pepper.
  • Stir in diced tomatoes, chicken broth, and tomato paste. Bring to a gentle simmer and cook for 10 minutes.
  • Remove from heat and stir in chopped parsley, mint, and lemon juice.

Assembly

  • Cut each whole wheat pita in half to make pockets.
  • Fill each pita half with lettuce leaves, then spoon in the chicken mixture.
  • Top with crumbled feta cheese and sliced cucumbers. Add tzatziki sauce if desired.
  • Serve immediately while warm.

Notes

Serve ingredients on a platter to allow for customizing each pita. Accompany with Greek salad or roasted vegetables for a complete meal.
