  • 1 cup lentils
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 cups spinach
  • 1 lemon (juice and zest)
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Olive oil For sautéing
  • Fresh herbs (parsley or cilantro) for garnish

Preparation

  • Heat a generous drizzle of olive oil in a large pot over medium heat.
  • Add the chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes until softened.
  • Stir in the minced garlic, cumin, and smoked paprika. Cook for another minute.
  • Add the lentils, vegetable broth, and can of diced tomatoes. Bring to a boil, then reduce to a simmer.
  • Cook for about 25-30 minutes, or until the lentils are tender.
  • Stir in the fresh spinach, lemon juice, and zest. Adjust seasoning with salt and pepper.
  • Serve hot, garnished with fresh herbs.

Notes

For thicker soup, blend a portion using an immersion blender; for thinner, add more broth. Experiment with seasonal vegetables or spices for variations.
