  • 4 pieces boneless, skinless chicken breasts (6–8 oz each)
  • 8 oz cream cheese, softened
  • 2 cups cooked spinach, chopped (fresh or frozen, water squeezed out)
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (mozzarella, cheddar, or feta)
  • 1 tbsp fresh herbs, chopped (parsley, basil, or thyme)
  • to taste salt and pepper
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder

Preparation

  • Preheat your oven to 375°F (190°C).
  • Place the chicken breasts between two sheets of plastic wrap and pound them to about ½ inch thick.
  • In a mixing bowl, combine the softened cream cheese, chopped spinach, minced garlic, shredded cheese, and fresh herbs. Season the mixture with salt and pepper.

Stuffing and Baking

  • Stuff each chicken breast with about ⅓ cup of the filling, fold in the sides, and roll tightly. Secure with toothpicks or kitchen twine.
  • Drizzle olive oil over the stuffed chicken breasts and sprinkle with paprika, garlic powder, salt, and pepper.
  • Place seam-side down in a baking dish and bake for 25-30 minutes until the internal temperature reaches 165°F (74°C).

Serving

  • Let the chicken rest for 5-10 minutes before removing toothpicks or twine.
  • Slice into medallions and serve with a salad or grains like quinoa or couscous.

Notes

Pound chicken evenly for consistent cooking. Chill filling for easier stuffing. Experiment with different fillings like sun-dried tomatoes or olives.
