Preparation

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a 9×13 inch baking dish or line it with aluminum foil.
  • Pat the chicken breasts dry with paper towels and arrange them in the prepared baking dish.
  • In a medium-sized bowl, combine mayonnaise, grated Parmesan cheese, garlic powder, black pepper, seasoned salt, and Italian herbs. Mix until smooth and creamy.
  • Spread the mayonnaise mixture evenly over each chicken breast.
  • If desired, sprinkle panko breadcrumbs over the mayonnaise mixture.

Cooking

  • Place the baking dish in the preheated oven and bake for 35 to 40 minutes.
  • Check for doneness using a meat thermometer; the internal temperature should reach 165°F (74°C).
  • Optionally, broil the chicken for an additional 2 to 3 minutes for a golden brown top.
  • Let the chicken rest for a few minutes before serving.

Serving

  • Garnish with freshly chopped parsley or chives before serving.
  • Serve alongside fluffy mashed potatoes, rice, sautéed vegetables, or a crisp garden salad.
  • Drizzle any leftover sauce from the baking dish over the chicken.

Notes

For even cooking, consider pounding the chicken breasts to an even thickness. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for 2 to 3 months.
