Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream the softened butter and powdered sugar together until light and fluffy, about 3-4 minutes.
  • Add the vanilla extract and mix until incorporated.
  • In a separate bowl, combine the flour, cornstarch, and salt. Gradually add this dry mixture to the butter mixture, blending until combined.
  • Scoop tablespoon-sized portions of the dough, roll them into balls, and place them on the prepared baking sheet about an inch apart.
  • Gently press each ball down with a fork to create a light indentation on top.
  • Bake in the preheated oven for 12-15 minutes or until the edges turn lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Cookies can be dusted with powdered sugar before serving. They pair well with tea or coffee. Store in an airtight container for freshness.
