Ingredients
  

For the Chicken

  • 2.25 lbs fresh chicken tenders You can replace with black beans for a vegetarian option.
  • 1/4 tsp cayenne pepper Adjust for spice preference.
  • 1/2 tsp dried oregano
  • 2 tsp paprika
  • 2 tsp cumin
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp olive oil

For the Rice and Broth

  • 2.25 cups chicken broth
  • 1.5 cups parboiled or converted rice

For the Cheese Sauce

  • 2 tbsp all-purpose flour Use cornstarch for gluten-free.
  • 2 tbsp butter Use plant-based for dairy-free.
  • 1 cup milk Almond or oat milk for dairy-free.
  • 1 cup shredded sharp cheddar cheese Use dairy-free cheese if needed.
  • 1/4 tsp kosher salt
  • 1/8 tsp cayenne pepper Optional for additional spice.
  • 1/4 tsp paprika

Instructions
 

Preparation

  • In a large mixing bowl, toss the fresh chicken tenders with all spices and olive oil. Allow to marinate for at least 10 minutes.

Cooking

  • Pour the chicken broth into the Instant Pot and sprinkle the rice evenly over the broth.
  • Place the marinated chicken tenders on top of the rice without stirring.
  • Secure the Instant Pot lid and set it to pressure cook for 5 minutes. Allow natural pressure release for 5-10 minutes before venting.
  • Remove the chicken and fluff the rice with a fork.

Make the Cheese Sauce

  • In the clean Instant Pot, switch to 'Sauté' mode and melt the butter.
  • Whisk in the all-purpose flour and cook until bubbly. Gradually add the milk, whisking until thickened.
  • Stir in the shredded cheese until melted and creamy. Adjust seasoning as needed.

Serve

  • Plate the rice and lay the chicken tenders on top, drizzling with the cheese sauce.
  • Garnish with cilantro or green onions if desired.

Notes

For deeper flavors, marinate chicken overnight. Adjust spices to taste. Store leftovers in an airtight container for up to 3 days.
