  • 1 cup long-grain white rice Rinsed under cold water before cooking.
  • 2 tablespoons vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium tomato, pureed
  • 2 cups vegetable broth (or chicken broth) Using high-quality broth is recommended for best flavor.
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt
  • 1 small bell pepper, diced (optional) Adds extra flavor and color.
  • as needed for garnish Fresh cilantro Optional, for garnish.

Preparation

  • Start by rinsing the rice under cold water to remove excess starch. Drain well.
  • In a medium saucepan, heat the vegetable oil over medium heat and add the chopped onion. Sauté for about 2-3 minutes until it starts to soften.
  • Incorporate the minced garlic into the pan and sauté for an additional minute, stirring often to prevent burning.
  • Add the rinsed rice to the saucepan and stir continuously for about 2-3 minutes until slightly toasted and golden brown.

Cooking

  • Pour in the pureed tomato, stirring well with the rice.
  • Add the vegetable broth, cumin, chili powder, and salt. If using, add the diced bell pepper for extra flavor and texture, and stir everything together.
  • Increase the heat to high until the liquid starts to boil. Once boiling, reduce heat to low and cover the saucepan with a tight-fitting lid.
  • Let the rice cook for 15-20 minutes until it absorbs all the liquid and becomes tender. Avoid lifting the lid during cooking.
  • After 15-20 minutes, remove from heat but keep the lid on. Allow to sit covered for an additional 5-10 minutes to let the rice steam and become fluffy.
  • Before serving, fluff the rice with a fork and garnish with fresh cilantro if desired.

Allow the rice to sit covered after cooking for the perfect fluffiness. Consider variations like black beans or corn for added nutrition and flavor.
