  • 2 cloves garlic, minced
  • 1 large bell pepper, diced
  • 2 medium tomatoes, chopped
  • 1 medium potato, diced

Instructions

Cooking

  • Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
  • Stir in the minced garlic and bell pepper, cooking for another 2-3 minutes until the bell pepper softens.
  • Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, stirring occasionally.
  • Mix in the diced tomatoes, potatoes, peas, raisins, cumin, oregano, salt, and black pepper. Stir well to combine.
  • Pour in the beef broth and bring the mixture to a gentle simmer.
  • Cover and let it cook for about 20-25 minutes, or until the potatoes are tender and the flavors meld together, stirring occasionally.
  • Taste and adjust seasoning if needed. If you desire a thicker consistency, you can simmer uncovered for an additional 5-10 minutes.
  • Serve hot, garnished with fresh cilantro and lime wedges if desired.
