Main Ingredients

  • 1 pound ground beef Choose beef with around 80% lean for best flavor.
  • 1 medium yellow onion, diced
  • 1 packet (1 ounce) taco seasoning mix
  • 1 can (4 ounces) diced green chilies, drained
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup frozen corn kernels
  • 1 can (10 ounces) red enchilada sauce
  • 3 cups shredded cheddar cheese, divided Use freshly shredded for better melting.
  • 1 bag (32 ounces) frozen tater tots

Garnish and Serving

  • to taste Chopped fresh cilantro For garnish.
  • to taste Sour cream For serving.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C). Lightly grease a 9 x 13-inch baking dish.
  • In a large skillet over medium heat, add the ground beef and diced onion. Cook until the beef is browned, about 6 to 8 minutes. Drain any excess fat.
  • Return the skillet to heat and sprinkle the taco seasoning, followed by the diced green chilies, black beans, corn, and enchilada sauce. Stir and let simmer for 8 to 10 minutes.
  • Stir in 2 cups of cheddar cheese until melted and well combined.
  • Spread the beef mixture evenly in the greased baking dish. Arrange the tater tots over the beef mixture.

Baking

  • Bake in the preheated oven for 35 to 40 minutes, until the tater tots are golden brown and crispy.
  • Remove from oven and sprinkle the remaining cheese on top. Return to the oven for an additional 5 minutes to melt the cheese.

Serving

  • Garnish with fresh cilantro and serve warm with sour cream on the side.

Notes

Let the casserole rest for a few minutes before slicing to make serving easier. Pair with a refreshing salad or tortilla chips.
