Preparation

  • Preheat your oven to 325°F (160°C).
  • In a mixing bowl, combine graham cracker crumbs and melted butter until the crumbs are fully coated.
  • Line a mini muffin tin with cupcake liners and press the graham cracker mixture firmly into each liner to form the crust.

Cheesecake Filling

  • In another bowl, beat cream cheese, sugar, and vanilla extract until smooth and creamy.
  • Add the egg and sour cream, mixing until well combined.
  • Pour the cheesecake filling over the crusts in the cupcake liners, filling each about three-quarters full.

Baking

  • Bake for 15-20 minutes, until the edges are set but the center is slightly jiggly.
  • Remove from the oven and cool to room temperature, then refrigerate for at least two hours before serving.

Serving

  • Top each mini cheesecake with your favorite toppings just before serving.

Notes
