Crust

Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C).
  • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  • Add granulated sugar and vanilla extract, and mix until well combined.
  • Add eggs one at a time, mixing thoroughly after each addition.
  • Gently fold in the sour cream until incorporated smoothly, ensuring no lumps remain.
  • Line a muffin tin with paper liners and divide the graham cracker crumbs evenly among the cups, pressing down to create a crust.

Baking

  • Pour the cheesecake batter over the graham cracker crusts until each is three-quarters full.
  • Bake for 18 to 20 minutes until the centers are set but still slightly jiggly.
  • Remove from oven and cool at room temperature before chilling in the refrigerator for at least two hours.

Serving

  • Once chilled, peel the paper liners off each cheesecake.
  • Top with whipped cream, berries, or any preferred topping before serving.
  • Arrange on a platter for presentation.

Notes

Use room temperature ingredients for easier blending. Don’t overmix the batter to prevent cracks. Allow cheesecakes to cool gradually in the oven to avoid cracks.
