Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened unsalted butter and powdered sugar until light and fluffy.
  • Gradually add in the all-purpose flour, cocoa powder, salt, and peppermint extract. Mix until combined, being careful not to overmix.
  • Gently fold in the chocolate chips.
  • Take small balls of dough and place them on a parchment-lined baking sheet, leaving enough space between each cookie.

Baking

  • Bake for 10-12 minutes, until edges are set but centers remain soft.
  • Allow cookies to cool on the baking sheet for about 5 minutes before rolling in additional powdered sugar.
  • Transfer cookies to a wire rack to cool completely.

Notes

For added fun, you can mix in crushed peppermint candies or white chocolate chips. These cookies store well for about a week in an airtight container.
