  • 1 cup shredded Monterey Jack cheese
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil for cooking the chicken
  • 1 tablespoon butter for sautéing onions

Spices

  • paprika to taste
  • Italian seasoning to taste

Instructions

Cooking Pasta

  • Bring a large pot of salted water to a boil and add the spaghetti. Cook according to the package instructions until al dente, then drain and set aside.

Cooking Chicken

  • Heat the olive oil in a large skillet over medium heat. Season chicken breasts with paprika, Italian seasoning, salt, and pepper.

  • Stir in minced garlic and cook for another 30 seconds until fragrant.
  • Pour in the chicken broth and heavy cream, bringing to a gentle simmer for about 5 minutes until slightly thickened.

Combining Ingredients

  • Return the cooked chicken and drained spaghetti to the skillet and toss to combine.
  • Sprinkle shredded Monterey Jack cheese over the top, cover to let the cheese melt for 2 to 3 minutes.

Serving

  • Portion the warm spaghetti into bowls or on plates. Garnish with fresh parsley if desired.
