Ingredients
  

For the chicken

  • 4 pieces boneless chicken breasts Choose breasts of uniform size for even cooking.
  • 1 cup cup mozzarella cheese, shredded Fresh mozzarella can be used for a richer flavor.
  • 1/2 cup cup spinach, chopped Fresh spinach is recommended.
  • 2 cloves garlic, minced Adjust according to taste.
  • 1 teaspoon Italian seasoning You can also use a mix of dried herbs.
  • to taste salt and pepper Season according to preference.
  • 1 tablespoon olive oil For searing the chicken.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the shredded mozzarella cheese, chopped spinach, minced garlic, Italian seasoning, salt, and pepper.
  • Create a pocket in each chicken breast by cutting into the thickest part, being careful not to cut all the way through.
  • Stuff each chicken breast with the cheese mixture.

Cooking

  • Heat olive oil in a skillet over medium heat.
  • Sear the stuffed chicken breasts for about 3 to 4 minutes on each side until golden brown.
  • Transfer the seared chicken to a baking dish and bake in the preheated oven for 25 to 30 minutes.
  • Check that the internal temperature reaches 165°F (75°C) before removing from the oven.
  • Let the chicken rest for a few minutes before slicing.

Notes

For extra flavor, consider marinating the chicken or using fresh ingredients. Leftover stuffing can be used creatively as a topping for baked potatoes or mixed into salads.
