Ingredients
  

Main Ingredients

  • 1 lb beef, cut into bite-sized pieces
  • 1.5 cups water For boiling the beef
  • 1 tsp black pepper
  • ½ tsp salt Adjust to taste
  • 3 plum tomatoes chopped
  • 1 red bell pepper chopped
  • 1 habanero pepper chopped Adjust based on spice preference
  • 1 onion chopped
  • ½ cup olive oil
  • ½ cup beef stock/broth
  • 1 tbsp bouillon powder
  • ½ tsp thyme
  • ½ tsp curry powder
  • Additional to taste salt

Instructions
 

Preparation

  • Boil the beef in 1.5 cups of water for 45 minutes to 1 hour until tender.
  • Check periodically to ensure there is enough water and to prevent burning.
  • Season with a little salt when boiling.
  • Once tender, remove the beef and reserve the stock.

Cooking

  • In a new pan, heat the olive oil over medium heat.
  • Sauté the chopped onions until translucent.
  • Add the chopped tomatoes, red bell pepper, and habanero pepper. Cook for 10-15 minutes.
  • Stir in the bouillon powder, thyme, curry powder, black pepper, and additional salt.
  • Reintroduce the boiled beef along with reserved broth and mix thoroughly.
  • Let simmer for another 20-30 minutes, adjusting the consistency with more broth or water if necessary.
  • Taste and adjust seasonings as necessary.

Notes

Marinate the beef beforehand for enhanced flavor. The longer you simmer, the deeper the flavors will become. Adjust the spice level based on your preference. Using a pressure cooker can also speed up the preparation.
