No Bake Chocolate Oatmeal Bars

Ingredients
  

Base Ingredients

  • 1 cup butter Unsalted, for melting
  • 1/2 cup brown sugar Packed
  • 1 teaspoon vanilla extract For flavor
  • 3 cups rolled oats Essential for the base

Filling Ingredients

  • 1 cup semisweet or dark chocolate chips For the chocolate layer
  • 1/2 cup peanut butter Creamy or crunchy, your choice

Instructions
 

Preparation

  • Line an 8-inch or 9-inch square baking dish with parchment paper, leaving some overhang.
  • In a large saucepan, melt the butter and brown sugar over medium heat, stirring continuously until melted and combined.
  • Add in the vanilla extract and mix well.
  • Fold in the rolled oats until evenly coated, reduce the heat to low, and cook for 3 to 4 minutes.

Assembly

  • Pour half of the oat mixture into the prepared baking dish, flattening it into an even layer.
  • In a small microwave-safe bowl, combine the chocolate chips and peanut butter, heating in short intervals until smooth.
  • Pour the chocolate filling over the oat base, reserving about 1/4 cup for drizzling.
  • Spread the remaining oat mixture over the chocolate, gently pressing down.
  • Drizzle the reserved chocolate mixture on top and refrigerate for at least 2 to 3 hours, or overnight.

Serving

  • After chilling, let the bars sit for a few minutes at room temperature and then slice into squares.

Notes

Store in an airtight container in the refrigerator for up to a week. Can be frozen for up to three months. Use parchment paper between layers to prevent sticking.
