Preparation

  • In a large mixing bowl, combine the rolled oats and cocoa powder. Stir well and set aside.
  • In a saucepan over medium heat, mix the granulated sugar, vegan butter or coconut oil, plant-based milk, vanilla extract, and a pinch of sea salt. Stir until it begins to boil.
  • Once boiling, let it boil for one minute while stirring constantly to prevent burning.
  • Remove the saucepan from heat and pour the hot mixture over the oats and cocoa mix in your bowl. Stir until fully combined.
  • Allow the dough to cool slightly. Then use a spoon to drop spoonfuls onto a lined baking sheet, shaping them into cookies if desired.
  • Let the cookies cool completely at room temperature, which may take 30 to 60 minutes.

Notes

Store cookies in an airtight container to keep them chewy. Experiment with add-ins like nuts or coconut for variety.
