Base Ingredients

  • 1 stick 1 stick (½ cup) butter Use unsalted butter
  • 1⅔ cups 1⅔ cups granulated sugar
  • ½ cup ½ cup milk Use whole milk or alternative
  • ¼ cup ¼ cup unsweetened cocoa powder
  • 1 cup 1 cup creamy peanut butter Creamy peanut butter preferred for texture
  • 2 teaspoons 2 teaspoons vanilla extract
  • 3 cups 3 cups quick oats For best results, use quick oats
  • ¼ teaspoon ¼ teaspoon salt

Preparation

  • In a large mixing bowl, combine 3 cups of quick oats and ¼ teaspoon of salt.
  • In a medium saucepan, melt 1 stick of butter over medium heat.
  • Add 1⅔ cups of granulated sugar, ½ cup of milk, and ¼ cup of unsweetened cocoa powder to the saucepan. Stir continuously until the butter melts and the sugar dissolves.
  • Bring the mixture to a boil for 1 minute without stirring. This helps create the cookie's structure.
  • Remove the saucepan from the heat and stir in 1 cup of creamy peanut butter and 2 teaspoons of vanilla extract until smooth.
  • Pour the chocolate mixture over the oats in the mixing bowl and mix until the oats are fully coated.

Forming Cookies

  • Prepare a baking sheet lined with parchment paper.
  • Drop dollops of the cookie mixture onto the prepared sheet, shaping them as desired.
  • Allow the cookies to cool at room temperature for about 30 minutes, then refrigerate for 1 hour to solidify.

Notes

Store in an airtight container with parchment paper between cookies. Can be frozen for up to three months.
