Preparation

  • In a medium saucepan, combine the honey and cocoa powder over low heat. Stir until the mixture is smooth and heated through, about 2-3 minutes.
  • Remove the saucepan from heat and stir in the creamy peanut butter and vanilla extract, mixing until fully combined.
  • Add the old-fashioned oats and a pinch of salt to the mixture. Stir until all the oats are coated.
  • If desired, fold in the chocolate chips or chopped nuts for added texture.
  • Using a spoon, drop spoonfuls of the mixture onto a lined baking sheet. Shape the cookies if needed to achieve your desired form.
  • Refrigerate the cookies for at least 30 minutes or until they set.
