Crust Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted

Filling Ingredients

  • 1 cup cream cheese, softened Make sure it's at room temperature for easy mixing.
  • 1 cup powdered sugar
  • 1/2 cup key lime juice Freshly squeezed for the best flavor.
  • 1 cup heavy cream Whipped until stiff peaks form.
  • Zest of 2 key limes

Preparation

  • In a medium bowl, combine the graham cracker crumbs and melted butter. Stir well until the mixture resembles wet sand.
  • Press this mixture firmly into the bottom of a 9-inch springform pan to form a solid crust.
  • In a large mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
  • Incorporate the key lime juice and zest into the cream cheese mixture until well combined.
  • In another bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until uniform.
  • Pour the filling over the prepared crust and smooth the top.
  • Cover and refrigerate for at least 4 hours, or overnight.
  • Once set, remove from the springform pan and garnish with lime slices or whipped cream if desired.

Notes

Use fresh key limes for better flavor. Allow enough chilling time for the cheesecake to set properly.
