Preparation

  • Gather all your ingredients and a mixing bowl.
  • In the bowl, combine the peanut butter, honey or maple syrup, and vanilla extract. Stir well until smooth and fully combined.
  • Gradually add the rolled oats and cocoa powder to the mixture. Mix until everything is evenly distributed and forms a thick batter.
  • Fold in chocolate chips if desired.
  • Line a baking sheet with parchment paper.
  • Using a cookie scoop or your hands, form the mixture into small balls and place them on the prepared baking sheet.
  • Flatten each ball slightly with the back of a fork or your fingers to create cookie shapes.
  • Refrigerate for about 30 minutes to 1 hour, or until the cookies firm up.
