  • 1 box graham crackers
  • 2 cups mini marshmallows For the marshmallow meringue
  • 2 large egg whites
  • 1 cup sugar For the marshmallow meringue
  • 1 cup semi-sweet chocolate, chopped For the ganache
  • 1 cup heavy cream For the ganache
  • 2 teaspoons vanilla extract

Preparation of Marshmallow Meringue

  • In a medium saucepan, combine the egg whites and sugar. Heat over low to medium heat, stirring often until warm and sugar dissolves.
  • Transfer the mixture to a mixing bowl and beat on high speed until stiff peaks form.

Making Chocolate Ganache

  • In a heatproof bowl, place the chopped chocolate. Heat the heavy cream in a saucepan until it simmers, then pour it over the chocolate.
  • Let it sit for a minute before stirring until smooth.

Layering the Cake

  • In a baking pan, layer graham crackers at the bottom.
  • Spread a layer of marshmallow meringue over the crackers, followed by a layer of chocolate ganache.
  • Repeat this process until you have 14 layers, finishing with a layer of ganache.

Chilling and Serving

  • Cover the assembled cake with plastic wrap and refrigerate overnight.
  • When ready to serve, cut into squares and serve chilled, optionally with berries or whipped cream.

Notes

For best results, be patient when whipping the egg whites to stiff peaks. Use high-quality chocolate for better flavor. Cover the cake tightly to store and prevent sogginess.
