One-Bowl Peppermint Brownies

Brownie Ingredients

  • 4 ounces dark chocolate chunks Approximately ⅔ cup
  • 10 tablespoons butter Should be at room temperature
  • 1 ½ cups granulated sugar
  • 2 large eggs At room temperature
  • 1 teaspoon vanilla extract
  • 2 teaspoons peppermint extract
  • cup all-purpose flour
  • cup cocoa powder
  • ¾ teaspoon salt

Preparation

  • Preheat the oven to 350°F (175°C) and line an 8-inch metal square pan with parchment paper.
  • In a large heat-safe bowl, melt the dark chocolate chunks and butter in the microwave in short 30-second bursts, stirring in between, until smooth.
  • Allow the melted mixture to cool slightly before whisking in the granulated sugar for about a minute.
  • Add the eggs, vanilla, and peppermint extracts to the mixture and whisk until combined and thickened.
  • Sift in the flour, cocoa powder, and salt. Fold in until no streaks remain and the batter is thick and glossy.
  • Fold in half of the crushed candy canes.
  • Pour the batter into the prepared pan and spread evenly.

Baking

  • Bake for 23 to 26 minutes, or until a toothpick inserted comes out mostly clean.
  • Immediately sprinkle the remaining crushed candy canes on top when brownies are out of the oven.
  • Allow to cool in the pan for at least an hour before cutting into squares.

Notes

Serve plain or enjoy with vanilla ice cream or chocolate sauce. Great for sharing, and can be stored in an airtight container.
