  • 1 cup rice Use long-grain or basmati for best results.
  • 1 can black beans, drained and rinsed
  • 1 link sausage, sliced Choose spicy or mild according to preference.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced Any color bell pepper works.
  • 2 cups chicken or vegetable broth Use low-sodium if preferred.
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • to taste salt and pepper Adjust to your preference.
  • for garnish Chopped cilantro Optional

Preparation

  • In a large skillet, heat the olive oil over medium heat.
  • Add the diced onion, minced garlic, and bell pepper. Sauté for 5 minutes until softened.
  • Add the sliced sausage and cook until browned, about 5 minutes.
  • Stir in the rice and drained black beans, then pour in the broth.
  • Season with smoked paprika, salt, and pepper.
  • Bring to a boil, then reduce heat to low and cover. Let simmer for 20 minutes.
  • After 20 minutes, remove from heat and fluff rice with a fork. Garnish with cilantro if desired.

Notes

Serve directly from the skillet or transfer to a bowl. Can be paired with a salad or crusty bread. Leftovers can be stored in the refrigerator for 3-4 days.
