  • 3 cups cooked rice Preferably day-old for better texture.
  • 1/2 cup BBQ sauce Choose a bold and smoky flavor.
  • 3 tablespoons honey
  • 1 tablespoon soy sauce
  • 2 cloves garlic Minced.
  • 1 tablespoon olive oil For cooking.
  • 1/4 teaspoon salt To season the chicken.
  • 1/4 teaspoon black pepper To season the chicken.
  • 2 stalks green onions Chopped for garnish.

Preparation

  • Cut the chicken breasts into bite-sized pieces and season with salt and black pepper.
  • In a mixing bowl, combine BBQ sauce, honey, soy sauce, and minced garlic; whisk until well blended.

Cooking

  • In a large skillet, heat olive oil over medium-high heat and add seasoned chicken in a single layer.
  • Sear the chicken for about 2–3 minutes without moving it, then flip and cook for another 3–4 minutes until cooked through.
  • Reduce heat to medium-low, pour the honey BBQ mixture over the chicken, and simmer for 3–4 minutes until thickened.
  • Add cooked rice to the skillet and gently mix everything together. Let it sit for 1–2 minutes for crispy bits.
  • Garnish with chopped green onions and serve hot.

Notes

For optimal results, use day-old rice to prevent mushiness. Cook in batches if necessary to avoid overcrowding the pan.
