  • 4 pieces boneless, skinless chicken breasts Choose high-quality chicken for best results.
  • 1/4 cup honey
  • 1/2 cup BBQ sauce Feel free to vary the type of BBQ sauce used.
  • 1 cup rice (white or brown) Consider jasmine or basmati rice for a twist.
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup mixed vegetables (optional) Such as bell peppers or broccoli.

Instructions
 

Preparation

  • Heat the olive oil in a large pan over medium heat.
  • Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
  • Sear the chicken breasts in the pan for about 5-7 minutes on each side until golden-brown, then remove from the pan.
  • Add the rice to the pan and stir for about a minute to absorb flavors.
  • Pour in the chicken broth, BBQ sauce, and honey, and stir to ensure the rice is coated.
  • Place the seared chicken on top of the rice mixture.

Cooking

  • Cover the pan with a lid and let it simmer on low heat for 20-25 minutes.
  • Add the vegetables in the last 5 minutes of cooking.

Serving

  • Serve the chicken over the rice with remaining sauce drizzled on top.
  • Garnish with fresh herbs if desired.

Notes

To store leftovers, place in an airtight container in the refrigerator for 3-4 days or freeze for up to 3 months.
