Instructions
 

Cooking the Chicken

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add 1 pound of diced chicken breast and cook for 5-7 minutes, stirring occasionally, until browned and cooked through.

Adding Flavors

  • Stir in 1 chopped onion and 2 minced garlic cloves, cooking until the onion is translucent.
  • Add 1 cup of pineapple chunks, 1 teaspoon of ground cumin, 1 teaspoon of chili powder, salt, and pepper. Mix well and cook for an additional 3-5 minutes.

Warm the Tortillas

  • Warm the corn tortillas in a separate pan or microwave as preferred.

Serving

  • Serve by placing a generous spoonful of the chicken and pineapple mixture in each warm tortilla, garnishing with fresh cilantro and lime wedges on the side.

Notes

Consider marinating the chicken in lime juice, cumin, and chili powder for extra flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days.
