  • 1 can coconut milk Full-fat preferred for creaminess
  • 2 limes Zested and juiced
  • 2 tablespoons olive oil
  • 2 cloves garlic Minced
  • 1 teaspoon ginger Grated

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Season chicken breasts with salt and pepper on both sides.
  • Add the seasoned chicken to the skillet and cook for 5-7 minutes on each side until browned and cooked through.

Cooking

  • Remove the chicken from the skillet and set aside on a plate.
  • In the same skillet, sauté minced garlic and grated ginger for about a minute.
  • Pour in coconut milk, lime zest, and lime juice, stirring to combine.
  • Return the chicken to the skillet, cover, and let it simmer for 10-15 minutes to absorb the flavors.

Serving

  • Drizzle with additional lime juice before serving.
  • Garnish with freshly chopped cilantro.

Notes

For an added flavor, marinate chicken in lime juice, garlic, and olive oil prior to cooking. Serve with jasmine rice or quinoa, and add grilled vegetables for a tropical vibe.
