  • 8 ounces Penne pasta
  • 2 tablespoons Olive oil
  • 1 pound Chicken breast, cut into bite-sized pieces
  • 2 cloves Garlic, minced
  • 1 jar (24 ounces) Marinara sauce
  • 1 cup Chicken broth
  • 1 teaspoon Italian seasoning
  • 1 cup Mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • Fresh basil, for garnish (optional)

Cooking

  • Heat 2 tablespoons of olive oil in a large pot over medium heat.
  • Add 1 pound of bite-sized chicken pieces and cook for about 5-7 minutes, stirring occasionally until they are browned and cooked through.
  • Stir in 2 minced garlic cloves and sauté for 1 minute until fragrant.
  • Add 8 ounces of penne pasta, 1 jar of marinara sauce, 1 cup of chicken broth, and 1 teaspoon of Italian seasoning. Stir to combine.
  • Bring the mixture to a boil, then reduce the heat to a simmer and cook for about 15 minutes, stirring occasionally.
  • Once the pasta is cooked to your liking, add 1 cup of shredded mozzarella cheese and 1/2 cup of grated Parmesan cheese. Stir until the cheese melts and creates a creamy sauce.
  • Serve hot and garnish with fresh basil if desired.
