  • 1 lb elbow macaroni

  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup shredded cheese (cheddar or your choice) Experiment with different types of cheese.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef or chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Preparation

  • Heat a large pot over medium heat and add ground beef or turkey. Cook until browned, about 5-7 minutes.
  • Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
  • Sprinkle in chili powder, cumin, and a pinch of salt and pepper. Stir and cook for another minute.
  • Add elbow macaroni, kidney beans, diced tomatoes, and broth. Stir to combine.
  • Bring to a boil, then reduce to a simmer. Cover and cook for about 10-12 minutes, stirring occasionally.
  • Once the pasta is tender, remove from heat and stir in shredded cheese until melted.
  • Taste and adjust seasoning with salt and pepper if needed.

Serving

  • Serve hot, optionally topped with shredded cheese, sour cream, or chopped green onions.

Notes

This dish reheats well in the microwave or on the stovetop. For long-term storage, freeze in airtight containers. Allows for variations; try adding vegetables or using plant-based meat for a vegetarian option.
