  • 1 can (8 oz) tomato sauce
  • 2 cups elbow macaroni Feel free to substitute with other pasta shapes.
  • 2 cups beef broth Use low-sodium broth for a healthier option.
  • 1 each onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Shredded cheese for topping (optional)
  • Sour cream for serving (optional)

Preparation

  • Heat a large pot over medium heat.
  • Add ground beef or turkey and brown the meat until fully cooked, then drain excess fat.
  • Add the chopped onion and minced garlic to the pot and sauté until the onion is translucent, about 2-3 minutes.
  • Sprinkle in the chili powder, cumin, salt, and pepper, stirring to combine.
  • Add kidney beans, diced tomatoes, and tomato sauce, mixing well.
  • Pour in beef broth and add elbow macaroni, stirring gently.
  • Increase heat to bring the mixture to a rolling boil.
  • Once boiling, reduce the heat and let it simmer for 15-20 minutes or until the macaroni is tender.
  • Remove from heat and adjust seasoning as necessary.

Serving

  • Serve hot in bowls, topped with shredded cheese and a dollop of sour cream.
  • For added crunch, serve with taco chips or a side salad.
