  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Preparation

  • Prepare your ingredients: Start by getting all your ingredients organized.
  • Heat the pot: In a large pot, place your olive oil over medium heat.

Cooking

  • Sauté onion and garlic: Add diced onion and minced garlic to the pot and sauté until translucent, about 3–4 minutes.
  • Cook the mushrooms: Toss in sliced mushrooms and cook until softened, about 4–5 minutes.
  • Add the orzo and broth: Stir in orzo pasta and vegetable broth. Bring to a boil.
  • Simmer until cooked: Reduce heat and simmer for about 10 minutes or until orzo is tender and has absorbed most of the broth.
  • Make it creamy: Stir in heavy cream and grated Parmesan cheese until smooth. Add a splash of broth if too thick.
  • Season to taste: Adjust with salt and pepper according to preference.
  • Garnish and serve: Top with fresh parsley before serving.

Notes

Store leftovers in airtight containers for 3–4 days. Reheat gently with a splash of broth.
