  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper adjust to taste
  • Salt and pepper to taste
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 cup basmati rice, rinsed and drained
  • 2 cups chicken broth
  • 1/4 cup parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium-high heat.
  • In a separate bowl, mix together the ground cumin, ground coriander, smoked paprika, ground turmeric, ground cinnamon, cayenne pepper, salt, and pepper.
  • Toss the chicken pieces in the spice mix until well coated.
  • Add the seasoned chicken to the pot and cook until browned on all sides, about 5-7 minutes.
  • Remove the chicken from the pot and set aside.

Cooking

  • In the same pot, add the chopped onions and minced garlic. Sauté for about 3-4 minutes until the onions become translucent.
  • Stir in the rinsed basmati rice, ensuring it’s well coated with the spices and oil.
  • Return the chicken to the pot. Stir everything to ensure even distribution.
  • Pour in the chicken broth and bring the mixture to a boil.
  • Cover the pot with a lid, reduce heat to low, and let it simmer for about 15-20 minutes.
  • After cooking, remove from heat but keep covered for another 10 minutes.

Serving

  • Fluff the rice gently with a fork. Garnish with chopped parsley and serve with lemon wedges.

Notes

For deeper flavor, marinate chicken in spices for a couple of hours or overnight. Fresh spices enhance the dish’s flavor. You can add vegetables such as bell peppers or slightly adjust the spice levels according to taste.
