  • 1 medium bell pepper, chopped Any color works, adds color and crunch.
  • 2 cloves garlic, minced Be careful not to burn while cooking.
  • 1 teaspoon paprika Adds a smoky flavor to the dish.
  • 1 teaspoon Italian seasoning Can be adjusted based on personal preference.

  • 1 cup veggies of your choice Such as peas, corn, or carrots for added nutrition.

Instructions
 

Preparation

  • Heat a large pot over medium heat.
  • Add chopped onion and bell pepper to the pot and sauté for about 5 minutes, until softened.
  • Stir in minced garlic and cook for another minute, being careful not to burn the garlic.
  • Add the sliced smoked sausage to the pot and cook for 5 to 7 minutes until it starts to brown.
  • Pour in the long-grain rice and stir to combine with sausage and vegetables.
  • Add chicken broth, paprika, Italian seasoning, salt, and pepper to the pot, then bring to a boil.
  • Once boiling, reduce heat to low, cover, and let it simmer for about 20 minutes.
  • In the last few minutes, add additional vegetables if desired.
  • Stir to combine and check if rice is fully cooked before removing from heat.

Serving

  • Serve hot using a ladle to portion onto plates or bowls.
  • Garnish with fresh herbs such as parsley or green onions for added freshness.

Notes

For variations, consider using spicy sausage, adding different seasonal vegetables, or stirring in cheese towards the end of cooking. Proper storage in an airtight container will keep leftovers fresh for 3 to 4 days in the fridge.
