  • 1 tablespoon baking powder

  • 1 tablespoon poppy seeds

  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup fresh orange juice Use freshly squeezed for best flavor.
  • 1 large Zest of 1 orange
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  • In a mixing bowl, whisk together the flour, baking powder, salt, and poppy seeds until well combined. Set aside.
  • In a large bowl, cream the softened butter and sugar together until light and fluffy, about 3-4 minutes.
  • Add the eggs, one at a time, mixing well after each addition. Then, stir in the orange juice, orange zest, and vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, mixing just until combined, avoiding overmixing.
  • Pour the batter into the prepared cake pan and spread it evenly.

Baking

  • Bake for about 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Notes
