  • 1.5 cups all-purpose flour Sifted before measuring
  • 1 cup granulated sugar
  • 0.5 cups unsalted butter, softened Should be at room temperature
  • 2 large eggs Should be at room temperature
  • 0.5 cups orange juice Freshly squeezed for best flavor
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 each zest of 1 orange Use a microplane for fine zest

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a loaf pan with butter and dust it lightly with flour.
  • In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer for about 3 to 5 minutes until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the orange juice and orange zest until well combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet mixture, mixing gently until just combined.
  • Pour the batter into the greased loaf pan and smooth the top.

Baking

  • Bake in the preheated oven for about 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

For serving, add a dusting of powdered sugar on top, or pair with whipped cream or vanilla ice cream. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
