  • 1 cup fresh orange juice
  • 1 tablespoon orange zest
  • 0.5 cups vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or two 9-inch round cake pans.
  • In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. Mix well to ensure there are no lumps.
  • In another bowl, mix together the crushed pineapple, fresh orange juice, vegetable oil, eggs, orange zest, and vanilla extract until everything is well combined.
  • Slowly pour the wet ingredients into the dry mixture, stirring gently until just combined. Avoid overmixing, as this will make the cake tough.

Baking

  • Pour the batter into the prepared pan(s) and spread it evenly.
  • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
