  • 1 cup ricotta cheese

  • Zest of 1 orange
  • 1/4 cup fresh orange juice
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Butter or oil for cooking For greasing the skillet or griddle

Preparation

  • In a large bowl, combine the ricotta cheese, eggs, milk, orange zest, and fresh orange juice. Whisk until smooth and well-blended.
  • In another bowl, mix the flour, sugar, baking powder, baking soda, and salt together.
  • Gradually add the dry mixture to the wet mixture, stirring until just combined. Be careful not to over-mix; a few lumps are okay.

Cooking

  • Heat a skillet or griddle over medium heat and add a small amount of butter or oil to coat the surface.
  • Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles appear on the surface and the edges look set, about 3-4 minutes.
  • Flip the pancakes and cook for an additional 2-3 minutes on the other side until golden brown.
  • Remove from the skillet and keep warm while you cook the remaining pancakes.

Serving

  • Serve immediately with your favorite toppings like syrup, fresh fruit, or whipped cream.

Notes

To keep pancakes warm while cooking, place them on a baking sheet in a preheated oven at 200°F. For a nutritional boost, consider swapping out some all-purpose flour for whole wheat or almond flour.
