  • 4 medium potatoes, diced Uniform size for even cooking.

Seasoning

  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

  • to taste pepper

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine the diced potatoes with olive oil, garlic powder, paprika, salt, and pepper. Toss until evenly coated.
  • Season the chicken thighs generously with salt and pepper and place them on a baking sheet.
  • Arrange the potatoes around the chicken thighs on the same baking sheet.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until the internal temperature of the chicken reaches 165°F and the potatoes are fork-tender and browned.
  • For a pop of color, garnish with fresh herbs before serving.

Notes
