  • 2 pieces oranges, zested and halved Use fresh, juicy oranges.
  • 2 pieces lemons, zested and halved Use fresh lemons.
  • 4 cloves garlic, minced Enhances flavor significantly.
  • 1/4 cup olive oil Helps in crisping the skin.
  • 1 tablespoon fresh thyme Chopped for flavor.
  • 1 tablespoon fresh rosemary Chopped for flavor.
  • to taste Salt and pepper Adjust according to personal preference.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a small mixing bowl, combine olive oil, minced garlic, thyme, rosemary, salt, and pepper.
  • Pat the whole chicken dry with paper towels.
  • Rub the herb and oil mixture all over the chicken, getting under the skin for maximum flavor.
  • Stuff the halved oranges and lemons into the chicken’s cavity.

Cooking

  • Place the chicken breast-side up in a roasting pan.
  • Roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.
  • Once cooked, take the chicken out of the oven and let it rest for 10-15 minutes before carving.

Serving

  • Serve the chicken on a large platter, garnished with fresh herbs, and alongside your choice of side dishes.

Notes

For enhanced flavor, consider marinating the chicken with the herb mixture for a few hours or overnight. Basting the chicken halfway through cooking can help keep the skin crispy.
