  • 4 pieces boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs preferably whole wheat for added nutrition
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 large eggs for coating
  • 2 tablespoons olive oil or cooking spray for air fryer basket
  • to taste Fresh parsley for garnish, optional

Instructions
 

Preparation

  • Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  • In a shallow bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix well to ensure even distribution of the herbs and spices.
  • In another bowl, whisk the eggs until well beaten.
  • Take each chicken breast and dip it first into the beaten eggs, ensuring it’s coated fully.
  • Transfer the egg-coated chicken into the bowl with the Parmesan mixture. Press the chicken firmly into the mix to coat it well on both sides.

Cooking

  • Lightly coat the air fryer basket with olive oil or cooking spray to prevent sticking.
  • Place the coated chicken breasts in the basket, ensuring they do not overlap. Cook in batches if necessary.
  • Air fry the chicken for 10-12 minutes or until the internal temperature reaches 165°F (75°C) and the coating turns golden brown.
  • Carefully remove the chicken from the air fryer and let it rest for a few minutes before serving.

Notes

For the best results, ensure the chicken breasts are of uniform thickness. You can pound them gently with a meat mallet. Experiment with different types of breadcrumbs for texture. Store cooled chicken in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 2-3 months.
