Ingredients
  

For the Balsamic Reduction

  • 1 cup balsamic vinegar

For the Chicken

  • 4-5 pieces large boneless, skinless chicken breasts Cut horizontally for even cooking.
  • 2 tablespoons olive oil For coating the chicken.
  • 1 teaspoon salt To enhance flavor.
  • 1/2 teaspoon pepper To enhance flavor.

For Assembly

  • 8 oz fresh mozzarella, cut into ½ inch slices Use for layering over the chicken.
  • 4-5 pieces medium peaches, pitted and sliced Choose ripe, sweet peaches.
  • 1/2 cup fresh basil, chopped For garnish and flavor.

Instructions
 

Prepare Balsamic Reduction

  • Pour balsamic vinegar into a saucepan and bring to a boil over medium heat.
  • Reduce heat and let it simmer for 10-15 minutes until syrup-like, stirring occasionally.
  • Set aside to cool once reached desired consistency.

Prepare Chicken

  • Cut each chicken breast in half horizontally to ensure even thickness.
  • Pound the chicken between parchment paper until about ½ inch thick.
  • Drizzle olive oil over chicken and rub to coat evenly with salt and pepper.
  • Preheat grill to medium-high heat and grill chicken for 5-8 minutes on each side until cooked through.

Assemble Dish

  • Place grilled chicken on a platter and layer with mozzarella slices.
  • Arrange sliced peaches over the mozzarella.
  • Drizzle balsamic reduction over the entire dish and sprinkle fresh basil on top.

Notes

Serve with a light salad or fresh bread and consider offering extra balsamic reduction on the side.
