  • 1 cup brown sugar, packed
  • 2 large eggs

Dry Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

Add-ins

  • 2 cups fresh peaches, peeled and diced
  • 1 cup rolled oats
  • ½ cup pecans, chopped (optional) Optional for extra crunch

  • ½ cup granulated sugar For topping

Preparation

  • Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  • Fold in the diced peaches, oats, and chopped pecans, if using.

Baking

  • Drop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • In a small bowl, mix the topping of granulated sugar and ground cinnamon. Sprinkle this mixture generously over the cookie dough.
  • Bake for 12-15 minutes or until the edges are golden and the centers look set.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to wire racks to cool completely.

Notes

For a chewy texture, consider using more brown sugar or slightly underbaking the cookies. Chill the dough for 30 minutes before baking for thicker cookies.
