Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh peaches, peeled and diced
  • 1/2 cup chopped nuts (optional)
  • 1/4 cup brown sugar

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
  • In a bowl, mix the flour, baking soda, salt, and ground cinnamon. Set this dry mixture aside.
  • In a separate large bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy.
  • Beat in the egg and add the vanilla extract, mixing until well combined.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Gently fold in the diced peaches and chopped nuts if using.
  • Drop spoonfuls of the cookie dough onto the prepared baking sheet, allowing space between each for spreading.
  • Sprinkle brown sugar over the top of the uncooked cookies for added sweetness.

Baking

  • Bake for 12-15 minutes, or until the edges turn golden brown.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Serve warm or at room temperature. Pair with vanilla ice cream or whipped cream for an indulgent treat. Store in an airtight container for up to five days, or freeze for up to three months.
