Ingredients
  

For the Cookie Dough

  • 1 cup creamy peanut butter Use natural or regular creamy peanut butter.
  • 1 cup ripe bananas (about 2 medium-sized bananas, mashed) Use overripe bananas for optimal sweetness.
  • ¾ cup brown sugar, packed
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ¼ cups all-purpose flour Substitute with gluten-free flour if desired.
  • 1 cup chocolate chips Can use dark or white chocolate chips.
  • ½ cup chopped nuts (optional) Use walnuts or pecans for added crunch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the creamy peanut butter, mashed bananas, brown sugar, and granulated sugar. Mix until smooth.
  • Add in the egg and vanilla extract, stirring until fully combined.
  • Sprinkle the baking soda and salt into the mixture; mix well.
  • Gradually add in the all-purpose flour, stirring until the dough is uniform.
  • Fold in the chocolate chips and nuts, if using.

Baking

  • Spoon tablespoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes until the edges are lightly golden.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a cookie sandwich, spread cream cheese or whipped cream between two cookies. Store in an airtight container for up to one week or freeze for up to three months.
