  • 4 pieces boneless chicken thighs or breasts
  • 1/2 cup peanut butter Use good-quality natural, unsweetened peanut butter.
  • 1/4 cup soy sauce
  • 1 tablespoon honey or brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon lime juice
  • 1/2 teaspoon chili flakes (optional) Adjust to taste for spiciness.
  • Salt and pepper to taste
  • Chopped green onions for garnish

Preparation of Sauce

  • In a medium mixing bowl, combine peanut butter, soy sauce, honey or brown sugar, minced garlic, minced ginger, lime juice, and chili flakes if desired.
  • Mix the ingredients thoroughly until smooth and creamy.

Cooking Chicken

  • Season the chicken with salt and pepper, ensuring each piece is coated evenly.
  • Heat oil in a large pan over medium heat and add the seasoned chicken.
  • Sear the chicken for 5-7 minutes on each side until golden brown.

Simmering with Sauce

  • Reduce heat to low and pour the prepared peanut sauce over the chicken, coating each piece generously.
  • Let it simmer for 15-20 minutes until the chicken is cooked through and the flavors meld together.
  • Alternately, use a slow cooker; cook on low for 4-6 hours.

Serving

  • Transfer to a serving platter, garnish with chopped green onions, and serve hot.

Notes

For the best results, marinate the chicken in the peanut sauce for a few hours or overnight. Adjust the level of spice by increasing chili flakes or using hot sauce. Peanut Butter Chicken can be frozen for up to 3 months.
